Maria Paoli, Founder and Managing director of Evolving Success, has spent the past 15 years within the Hospitality and Airline Industries, where she has been involved in facilitating client service training programs, communication and team building workshops.

She obtained full qualifications as a Teacher and Trainer, at The University of Melbourne, in 2002, establishing Evolving Success in 2003 to cater to the training requirements of all service industries, specialising in Communication, Customer Service and all Hospitality Food & Beverage Units.

Maria's love affair with coffee began as an infant, when her grandad would flavour her milk with a little espresso. Her great grandmother and name sake, would roast her own blends and then grind the beans freshly every day. “Coffee was just a part of life,” Maria claims.

As an Accredited National Barista Judge, Coffee Trainer and Creator of the “Historical Coffee Trek,” through Melbourne , she has dedicated her services to developing training programs to enhance the espresso making skills and knowledge of the hospitality & coffee industries.

Customer Service & Communication Workshops

Evolving Success is committed to the training and delivery of key performance skills, essential within all service industries.

Our workshops are designed to emphasize the underpinning knowledge and highlight the importance of quality service. The Customer Focused Workshops emphasise Customer Recognition and Customer Recovery strategies. They also focus on how key performance strategies can be turned into profit, with the incorporation of suggestive selling techniques.

Coffee Making Courses

“Coffee making is a passion for extracting the ideal aromatic profile from the roasted bean.”

Each month Evolving Success runs a Coffee Appreciation Evening, where you, as the consumer, café operator or coffee maker can participate. This is your opportunity to take charge of the espresso machine, learn how to cup and identify flavours in coffee.

During the course of the evening we will learn about roasting your own beans and compare the domestic coffee machine to the commercial machine.

All participants will receive a Coffee Appreciation Certificate .

Evolving Success in alliance with The Good Taste Company, offers participants within the Coffee Industry Nationally Recognised Accreditation , as well as onsite training for all food and beverage units.

We currently run special workshops for VET hospitality Students and Industry Trainees, who are completing Prepare and Serve Espresso Coffee, THHBFB12A and Plan & Monitor Espresso Coffee,THHDFB5B.

Melbourne’s Historical Coffee Trek

Evolving Success invites you on an Espresso Culture Crawl through Melbourne , commemorating the contributions of our early immigrants, in developing our espresso industry. We visit original cafes and roasting houses around our beautiful city, sampling blends and learning the art of a perfect extraction. Tours are inclusive of lunch at:

Tour Bookings

Tours run on a Thursday 10am-1pm

& alternative Saturdays 10am-1pm

Cost: $55 tour, coffee, lunch and wine inclusive or $40 tour & coffee.

Alternative days and times can be arranged for groups with minimum of 6 people.

School excursions are welcome and are adapted to suit student needs and budget.

Tours can be conducted in Italian if requested by visitors or students of Italian.

Bookings are essential, as tour days and times are subject to variation.
